Cilantro rice

Delicious as a side dish or in burritos.

2 TBS butter or olive oil
1 onion, pureed
2 cloves garlic, minced
4-6 cups cooked brown rice
1/4 to 1/2 bunch cilantro, washed & chopped
1/2 lime
garlic salt

Melt butter in pan. Saute onion and garlic till soft. Add rice and continue to saute until rice is heated through and lightly browned (if desired). Add cilantro and stir. Squirt lime juice over and sprinkle garlic salt to taste.

I usually cook my rice in a rice cooker and freeze it in batches of 3 cups.

The ingredients you listed (besides the rice) are excellent to heat black beans up in too, FYI. Makes the beans really yummy.

Good idea, sounds yummy! Could also add a tortilla.
