Oatmeal Apple Bars

Tasty for a snack or breakfast.  And gluten free! 

3 c. rolled oats (not quick)
2-1/2 tsp baking powder
1/2 tsp salt
1 TBS cinnamon
6 TBS sweetener (honey, agave, or sucanat)
1 can coconut milk
2 eggs
1/2 c applesauce
1/4 c melted butter
2 tsp vanilla
1 apple, diced.

Mix all the dry ingredients in a medium bowl.  Mix all the wet ingredients in a small bowl.  Add the wet to the dry.  Stir in the apple dices.  Pour into greased 9x13 pan.  Bake 350 for 25-30 minutes.
